Red wine is produced from red or black grapes and it gets its color from letting the skin of the grape soak in the liquid until the color bleeds out. While doing so it also imparts a substance called tannin. Tannin gives the wine a dry taste which adds a lot of flavor. As the wine ages, the tannin becomes like a silky dryness and gives way to an earthier, more complex and richer flavor. The tannin gives character to the wine. The older the wine, the better the taste. Of course, a wine that has aged too long may taste bitter and have a vinegar-like flavor. Young wine is usually light, fruity and easy to drink. Varieties of wine that have high levels of tannin include Cabernet Sauvignon, Syrah, Shiraz, and Merlots.
A good red wine is also served at room temperature, never chilled. If it is too cold, you risk losing its subtle flavors and texture. As a guideline, most red wines taste best between 62F to 65F. The thing to know is that a good wine needs to be at the right temperature to experience all of its magnificent flavors.
